Week 1 of Paleo

Here we are at Week 1 of doing the Paleo diet. I’m feeling a little tired but not sluggish like I did around the holidays. The thing I’m missing most at this point is some beef nachos. I have only lost a few ounces but I have also been working out this week. We were only going to do it for 21 days but we booked a vacation this past week for our 1 year anniversary, so I think we are going to extend the diet!!! Let me just make a disclaimer here, I am a very picky eater so if I can do this and right great recipes I know you can to!

The first and second days of the diet were rough. I might have cheated and ate some caramels. By the third day, I was really starting to not feel so hungry all the time or have the cravings for all things sweet and salty.

My secret to continuing the diet is to plan your meals out. I made a meal plan for the week that listed our breakfast, lunch, dinner and snack for the whole week. This has really helped us stick to it and not have any excuses when it comes to “what’s for dinner”.  My other secret is that I have a cup of hot coco almost every night. I make it with Almond milk so it’s Paleoish, but it really helps me get through the day knowing I have something to look forward to at night.
Here’s just one dish that I whipped up during this week:

Tuna Patties
 
3 5 oz. canned tuna with Water
2 eggs
Sea Salt
Coconut Oil

Mix together your Tuna, eggs, and sea salt. Melt your Coconut oil in a skillet over medium-high heat. Drop your tuna mixture in the skillet forming patties. Cook until light brown on both sides

Lemon-Mayo sauce
 
½ cup Miracle Whip
Lemon Juice
Minced Garlic

Mix together in a bowl. Serve with Tuna Patties. Also good if you mix in the Lemon-Mayo Sauce with the Tuna Patties.

Serve with Squash. Heat coconut oil in a skillet throw in some squash and cook until tender. Toss with some sea salt.
