Paleo Breakfast Casserole

Alright guys, you know I like to prep my breakfast at the beginning of the week for an easy on the go meal. I have noticed while being on the paleo diet, there are not a lot of make-ahead delicious meals that fit my taste buds. And since this is my second time on the diet, I have definitely figured out what works best for our little family and what recipes to stay clear of.  For example, butternut squash soup was not a winner in the Nissen household. So here you go, here is my favorite low-carb, paleo breakfast item to make.


 Ingredients:
 
1 lb breakfast sausage
7 eggs
½ lb bacon
½  – ¾  large sweet potato or 2 small sweet potatoes (cut into cudes)
½ onion (I always use yellow, they’re not as tart)
½ tablespoon minced garlic

 Instructions:

 Preheat oven to 350

 Place sausage in a mixing bowl and mix in one egg.

 Place the meat mixture in a 9 X 13 glass casserole dish. This is going to be your crust so press it into the bottom and corners of your dish

 Put in the oven for 8-10 minutes or until the sausage is lightly brown on top. It doesn’t need to be completely cooked since you’re going to cook it again with the rest of the ingredients

 While the sausage is baking, cut up your ½ lb of bacon into little bits and throw it into a skillet on medium-high heat until crispy. Transfer the bacon to a plate with paper towels and drain your skillet leaving about 2 tablespoons of grease.

 Add garlic, onion, and sweet potato to the pan. Stir them around and let cook for about 10 minutes or until your sweet potatoes are tender.

 While this is cooking whip together the remaining 6 eggs

 Once your sweet potato mixture is done, make the layers on top of your sausage in your casserole dish. Add the sweet potato mixture, then your eggs over your sweet potatoes and lately add your bacon.

 Place in the oven for about 30 minutes checking with a toothpick or knife for doneness.
