Breakfast Quesadilla

1 can black beans
1 can corn
½ to whole onion
1 diced bell pepper
½ pack of taco seasoning
2-3 cups shredded cheese
6 eggs
8-10 tortillas

Mix all your ingredients into a large mixing bowl except the eggs, green peppers and torillas. Set aside.
Scramble your eggs in a skillet along with your green peppers. Mix in your cooked eggs with the rest of your ingredients.
Build your tortilla how you like and cook until golden brown on both sides. You can either use a Panini maker or regular skillet to cook with,
If saving for later, put on baking sheet and place in freezer for 1 hour, then you can individually wrap or place into freezer bag and throw in freezer.

These have turned into a staple Valentine dish in our household. They taste like they came straight from heaven. I made them a week ago for our Sunday dinner and it was a hit! Super easy to make as well which is an additional plus.


INGREDIENTS

1 Duncan Hines box Red Velvet cake mix
1/2 cup butter, melted
2 eggs
1 package Jell-O insant white chocolate pudding (3.3 ounces)
6 tablespoons vegetable oil
1 package Oreos
8 ounce package cream cheese
1/2 package (1/2lb) chocolate bark (CandiQuick) (or about 1-1/2 cups chocolate chips)
mini chocolate chips for garnish

INSTRUCTIONS

Preheat oven to 325 degrees F. Combine cake mix, melted butter, eggs, pudding mix, vegetable oil and mix well until thoroughly combined (2-3 minutes on medium of electric mixer).

Spray a 9x13 with nonstick cooking spray. I like the baking variety that has flour in it. Then spread the red velvet brownie layer into the pan. It will be VERY thick, use the back of a spoon (or clean hands) to help spread it into all edges of the pan.

Bake for 20-22 minutes or until a toothpick inserted comes out clean (ovens vary so watch closely). Let cool completely before flipping out.

Crush package of Oreos in a food processor (or in a large plastic bag and rolling pin).
Melt cream cheese for 15 seconds in a microwave to soften.

Stir together crushed Oreos and cream cheese until blended smooth.

Carefully spread out Oreo truffle mixture on top of baked red velvet brownies. Use your hands to help press it down instead of spreading to avoid tearing the brownies.

Melt chocolate candy bark (or chocolate chips) and pour over top Oreo truffle layer.

Sprinkle with mini chocolate chips while still warm.

Let cool completely before cutting into squares.

Chad and I normally don't do anything big for Valentine's day. I'll normally make a nice meal and bake a valentine dessert and then we exchange a small present to one another. Below is what I'm asking for this year! Granted I probably won't get everything on my wish list but our anniversary is coming up next month!!

1. I have been drooling over Albion ever since I saw them on Pinterest but their clothing is so expensive. 

2. Aerie barlettes, I actually just ordered these and I can not wait for them to come in the mail! I hope they're as comfortable as they look. And they have a sale going on right now, buy one get one for $10

3. I have heard such great things about Purity that I think it's time to try it out for myself

4. People have raved about this Sally Hansen miracle gel and I can not wait to try it out. Every time I go to Target they don't have the color I want.

5. This coffee and mascara shirt sums up my weekend, if only it had leggings on it as well. 

6. I love this necklace and the option to have it layering(for future initials) if you would like

This weekend was per bliss. So many times I get caught up in the “to-do” lists that we don’t just simply sit back and enjoy! I think our pastor was speaking right to me when he read this verse…

"LORD, remind me how brief my time on earth will be. Remind me that my days
are numbered - how fleeting my life is. You have made my life no longer than
the width of my hand. My entire lifetime is just a moment to you; at best,
each of us is but a breath" Psalm 39:4-5 NLT

It was definitely fitting. Almost everyone at work is sick, so I was bound to have my sinuses act up over the weekend. We spent Friday evening relaxing and Saturday we slept in, went to go get coffee, and just drove around ending up at a winery we didn't even know existed. Sunday we went to church and then went over to a friend's house to watch the big game! 


I think Karl likes it when we are lazy
